Banana Bread
(best thing in the world for over ripe bananas)
½ cup of soft butter
2 eggs
2 cups of flour
1½ cups of sugar
2 teaspoons of ground cinnamon
½ teaspoon of salt
1 teaspoon of baking soda
1 teaspoon of vanilla
3 very ripe bananas (mash with a fork)
½ cup of chopped pecans (optional)
Mix ingredients together.
Grease and flour 2 bread pans.
Bake for 300 degrees for 45 min. to an hour or until it is firm.
Do not open the oven until it looks ready because the bread will fall.
After removing from oven let cool 10 min. before taking bread out of pans.
{try putting a little butter on a slice the next day and putting it in the the micro wave on a napkin for 10 seconds}
(Bananas that have darkened can be peeled and frozen in a plastic container until it's time to make bread)
